Hearty cauliflower dahl

200g chana dahl, washed
1 1/2 tbsp ghee
1 tsp cumin seeds
1 tsp brown mustard seeds
12 fresh curry leaves
1 brown onion, finely chopped
4 garlic cloves, crushed
2 tsp finely grated fresh ginger
1 long fresh red chilli, thinly sliced
1 head cauliflower, cut into florets
2 tsp ground turmeric
1 tbsp lemon juice
1/3 cup fresh coriander leaves, coarsely chopped
Mango chutney, to serve
Low-fat Greek yoghurt, to serve (optional)

in a saucepan and cover with warm water. Bring to the boil over high heat. Reduce heat to medium and cook, skimming the foam off the surface and discarding, for 12 minutes until just tender. Drain, reserving 1 1⁄2 cups of the cooking liquid.
Step 2
Meanwhile, heat 1 tablespoon of the ghee in a large non-stick heavy-based frying pan over medium-low heat. Stir in the cumin and mustard seeds for 30 seconds or until aromatic. Stir in curry leaves for 1 minute or until aromatic. Add the onion. Cook, stirring, for 2 minutes or until soft. Add garlic, ginger and chilli. Cook, stirring, for 1 minute or until aromatic. Add the cauliflower and remaining ghee. Cook, stirring, for 1 minute or until well combined. Stir in turmeric for 1 minute or until aromatic.
Step 3
Add dahl and reserved water to pan. Cook, covered, stirring occasionally, for 16 minutes or until cauliflower is tender. Season. Stir in lemon juice and coriander. Serve with chutney and yoghurt, if using.

Chana dahl is split chickpeas. They soften yet hold their shape when cooked.
